Society de la Rassi makes non-alcoholic sparkling wine, each bottle holding 0.5% ABV or less. Neue Brut draws from 100% Chardonnay sourced from Spain. Beso Besa, a dealcoholized sparkling Rosé from Provence, opens with wild strawberry and rose-petal aromas, then settles into a crisp mineral backbone. The house uses low-temp vacuum distillation to remove alcohol.
