Perissos Wine Group began in Burnet in 2006 with a Farming First philosophy that sources 100% Texas-grown fruit. Seventy percent of the program comes from estate vineyards, the remaining thirty from other Texas farmers. The cellar employs cold soaking with refrigeration to hold fermentation below 55 degrees. Wines are made primarily in a traditional dry style. The tasting room is located on site.
