Mendelbaum Cellars in Fredericksburg works across ten varietals, from Cabernet Sauvignon and Merlot to Riesling and Viognier. The portfolio is built around named vintages, each representing a biblical story. The 2020 Ten Commandments, a blend of Cabernet Sauvignon, Merlot, Petit Verdot, and Syrah aged twelve months in French oak, anchors the red program. The 2021 Mare Nostrum, composed of Carignan, Durif, and Syrah and aged eighteen months in French oak, follows. Lighter offerings include the 2023 Aqueduct, a Sauvignon Blanc and Viognier blend, and the 2023 Judea, a semi-dry mix of Cabernet Franc and Sauvignon Blanc. The tasting room is open daily at 10207 E.
