Twenty-six scenic acres in Loudoun County in historic Hillsboro, a Quaker settlement from 1752. Jose Ayala, formerly of Boston Beer Company, leads the brewing program using crystal-clear Blue Ridge Mountain water. The house produces mead from on-site bee hives with honey made entirely on premises. A well-curated selection of local wines by the glass or bottle complements the work. The kitchen runs pub-style fare, British dishes, and weekly seasonal specials. Two African lion siblings, Jezebel and Justin, were rescued and brought to Hillsboro in the 1980s. Justin weighed 530 pounds and measured 10 feet from nose to tail. Well-behaved, leashed dogs are welcome on the property and in the tasting room.
