Jack Rabbit Hill operates as a certified organic and biodynamic farm in Hotchkiss, Colorado. The cellar works with native yeasts naturally present on hand-picked grapes and in the space itself, with no commercial additives. Fermentations typically complete in five to six months. White wines age sur lees in stainless vats. Red wines spend eighteen to twenty months in neutral French oak. The compost program draws on biodynamic preparations made from fermented plant and animal materials, alongside hormone- and antibiotic-free horse and cow manure. Through WineTapistry, a keg and box wine program, the house supplies Colorado restaurants, caterers, and events with hand-selected wines from winemakers across California, Oregon, and Washington.
