I Fabbri has been making wine in Toscana since 1620, eleven generations deep in the work. Susanna Grassi leads the program across six hectares planted between 450 and 680 meters altitude, where Sangiovese becomes Chianti Classico Lamole, Terra di Lamole, Riserva, and Gran Selezione. The house also produces Casole Rosé and Casole Bianco. Beyond wine, the estate presses extra virgin olive oil from leccino, frantoio, and moraiolo olives, hand-harvested and pressed within twelve hours of picking.
