Eric Hays leads the program at Chateau Davell, bringing fifteen years of restaurant and club management experience along with work as an Assistant Winemaker at a local winery. The estate vineyard sits at three thousand feet in the El Dorado AVA, farmed without herbicides, pesticides, or chemical fertilizers. Additional fruit comes from sustainable and organic growers across El Dorado and Lodi Counties. The house produces Zander Zinfandel and Davell Cabernet Franc alongside Avery Sparkling Rosé and Cuvee Blanc. All wines are unfiltered and unfined, bottled by hand in recycled-content glass with FSC Certified corks. The tasting room pairs six current vintages with local and farmstead cheese, and hosts live music and wood-fired pizzas from June through October.
