Mike Koller, an enologist, leads the program at Cask 307 in Madison, Ohio. Gene Sigel tends grapes at Debevc Farms Estate. The portfolio spans Fumé Blanc, Cabernet Sauvignon, Chardonnay, Riesling, Pinot Grigio, Vidal Blanc, and Chambourcin. Bourbon Cabernet Sauvignon ages 18 months in barrels from Red Eagle Distillery. Bourbon Chardonnay spends 9 months in Red Eagle Distillery bourbon barrels. Espresso Ice Wine is made with Sumatra espresso beans roasted locally by Scribblers Coffee Co. of Geneva, cold soaked in Vidal Blanc Ice Wine for two days. Bethany Cellars Lost Chardonnay is aged 10 years. The house represents 47 years of award-winning wine-making and 102 years of Grand River Valley vineyard refinement. A deli offers premium charcuterie and cheese.
