Pía Carrau, tenth generation of a winemaking family that arrived from Spain in the 1930s, leads Bodega Cerro Chapeu in Rivera. The cellar descends three levels into a hill, maintaining 18 degrees year-round without refrigeration. Nearly all production unfolds without electrical power. Forty hectares across Uruguay and five in Brazil feed the program, which centers on Tannat. Visits end with tastings, charcuterie, and empanadas.
