Three friends, Giambattista Cilia, Cirino Strano, and Giusto Occhipinti, founded COS in 1980 on 3.60 hectares of alberello vines in Bastonaca, near Vittoria. The name itself is their acronym. That first October, they bottled 1,470 bottles. The work has since moved to the restored Fontane facility and expanded across Cerasuolo di Vittoria, Nero d'Avola, Frappato, Nerello Mascalese, Grillo, and Inzolia. The vineyard follows biodynamic viticulture principles. In 2000, the house introduced Pithos, a Cerasuolo fermented and aged entirely in terracotta amphorae. Today, 150 amphorae are used for fermentation and aging. In 2005, COS earned Sicily's first DOCG designation for Cerasuolo di Vittoria.
